Spring Pasta Salad

Ingredients:

  • 1 lb Sweet Italian Sausage, Cooked and sliced

  • ! box Gluten Free Noodles (I used Jovial Cassava Fuccini), cooked al dente & Cooled

  • 1 Package Sugar Snap Peas, sliced into 1/2 inch pieces

  • 1 package Cherry Tomatoes, quartered (can also use Grape Tomatoes),

  • 1 head Broccoli, chopped into bite sized pieces

  • 1/2 Sweer onion, diced

Dressing:

  • 1/2 cup Extra Virgin Olive Oil

  • 2 tbsp Balsamic Vinegar

  • 2 Tbsp Red Wine Vinegar

  • 1 tsp dried Oregano,

  • 1 tsp Dried Thyme

  • 1/2 tsp sea salt & Black Pepper


How to:

Combine all ingredients into a large bowl and mix to combine. Can enjoy now (warm) or refrigerate to allow flavors to marinate until serving.

Best used for lunch or a pot luck meal.
