SnowDay Overripe Banana Bread

Ingredients:

3 brown bananas
3 egg replacers (or 3 large eggs)
1/2 tbsp vanilla extract
1 tablespoon honey
¼ cup coconut oil
1 1/2 cups blanched almond flour
2 scoops vanilla protein powder
2 tbsp prebiotic fiber (I used psyllium pre & probiotic fiber)
½ tsp sea salt
1 tsp baking soda
optional (and recommended) 1/2 tsp nutmeg, 1 tsp cinnamon)
optional add some crunch like 1/2 cup of chopped walnuts, pecans, pumpkin seeds

How To:

1. In a food processor, blend together bananas, eggs, vanilla, honey, and coconut oil
2. Pulse in almond flour, protein, fiber, salt, baking soda and spice
3. Scoop batter into a greased loaf pan (I prefer using glass)
4. Bake at 350°F for 55-60 minutes
5. Cool for at least 15 mins before removing from pan/slicing
Serve with bacon and #mughug beverage of choice

What makes this breakfast bread nutrient dense and glycemicly balanced is the 1. protein powder and 2. the pre & probiotic flower.

  1. Adding protein will increase “what” componets your body is digesting. Protein is a primal energy source for your muscles. It also triggers the hormones which promote feelings of satiety (feeling fuller). Because protein takes more steps to digest/break it down, this allows for slower digestive emptying (release of glucose(blood sugar) into the blood stream so your insulin wont spike and you have a stready stream of energy to last you all snow playing thought.

  2. The pre & post biotic fibers deliver some much needed love to your microbiome! Giving those bugs some food and kindness can allow them to make SCFA’s that do sooooo much, namely providing colonocytes which are crutial for GI health. This fiber is what is preventing your blood sugar from spiking. Short-chain fatty acids are actually the tool for controlling and regulating satiety hormones.

Short chain fatty acids (SCFA) are actually the solution to insulin resistance!

This recipe was adopted from Elayna’s Pantry. I love so many of her recipes, having them was a savior when my family first went GF. We especially loved the breakfast bread. We made it every week for months! Adding diffrent mix’ins like dried cranberries, walnuts, chia seeds, its the fantastic base.
