Heaven Seafood Dip

When I made this, I of course needed to make two versions. 1 dairy free for me and the other full of all the dairy goodness for my family. Both versions were successful, it just depends on your dietary preference.

Ingredients:

2 shallots, diced

1 green pepper, diced

3 garlic cloves, minced

1 can artichoke hearts, quartered and chopped

bunch of spinach, torn into pieces

1/2 lb lobster meat, diced

1/2 lb mixed seafood (octopus, mussels, clams, shrimp, scallops, crab)

* you could also use 1 lb lump crab

optional topping handful of parsley & BBQ Pork Rinds

Dairy Version

3oz cream cheese

3oz sour cream

3 oz mayo

1 cup shredded sharp cheddar cheese

Dairy Free Version:

5 oz vegan cream cheese

5 oz vegan soft cheddar cheese

How to:

Step 1 - Preheat oven to 375’. Heat avocado oil in large skillet over medium-high heat. Add garlic, shallots and peppers. Saute for 3 mins until tender.

Step 2 - Add artichoke and spinach and saute for 3 mins until spinach is wilted.

Step 3 - Add seafood meat and stir until just heated, about a minute.

Step 4 - Turn off burner and add 1 heaping tsp dijon mustard, 2 tbsp lemon juice, 1 tsp lemon zest,

Step 5 - Prepare cheese sauce by combining ingredients in a small bowl.

Step 6 - Add cheese sauce to seafood veggie mix until well combined.

Step 7 - Place seafood dip into an oven safe serving vessel (I used crock bowls). If adding crushed pork rinds add them on-top. Place crock into the oven and cook until cheese begins to melt. ~35 mins. Remove and top with fresh herbs (cilantro, parsley or chives).
