Acorn Squash

Ingredients:

1 Acorn Squash

2 tbsp melted Coconut Oil

1 tsp Maple Syrup

pinch of salt.

How to:

Preheat oven to 375’

Step 1 - Slice Acorn squash in half and scoop out the seeds & guts. (tip - keep the seeds for roasting).

Step 2 - Laying acorn cut side down, slice into 1/2 inch strips.

Step 3 - Whisk to combine coconut oil, maple syrup and talk.

Step 4 - Laying cut squash out on parchment lined bake sheet, brush both sides of squash with coconut oil.

Step 5 - Bake in oven for 15-20 minutes (depending on width of sliced). Then flip and bake for another 15-20.

Step 6 - Serve with your meal. I keep the skins on but you could remove them before plating.
