Baby Bell Peppers with Black Bean Dip

Ingredients:

1 lb Baby Bell Peppers

1 14oz can Black Beans (rinse and drained)

1 4oz can diced green chiles, only using half the can for the recipe

2 limes, juiced

1 tsp Hot Sauce (Cholula Original)

1/2 Red onion

1 /2 Bunch Cilantro

1 plum tomato or 10 grape tomatoes

Salt & pepper

optional- Cotija Cheese topping, 1 jalapeno pepper

How to:

Prepwork:

  1. Drain & Rinse Black Beans

  2. Halve and remove seeds from Baby Bell Peppers

  3. Finely dice 1/2 of the Red Onion.

  4. Chop up 1/2 of the Cilantro bunch.

  5. Juice limes, or measure out 2 tablespoons juice.

  6. Finely dice tomatoes - removing any seeds and juice.

Actionwork:

  1. In a food processor, pulse black beans, green chilies and hot sauce. Scoop “dip” into a medium bowl.

  2. Add red onion, cilantro, tomatoes to bean dip and mix until well combined. Salt & pepper to taste. Optional to add jalapeño pepper for added heat.

Serving options:

1) Place black bean dip in center and spread baby bell peppers around.

2) Fill baby bell peppers with bean dip and place onto serving platter. Add crumbles of Cotija cheese topping.
